Happy What I Ate Wednesday!!
You know what’s super exciting?! Its the end of January!!! That means its ALMOST February. I loathe February, but I’m psyched to start half marathon training February 2nd. And! February means springtime’s ah-comin’!! Yay yay YAY!!!
SO anyway. Breakfast. I’m like obsessed with cabbage lately. Eggs, coleslaw (just the veggies, not the mayo) topped with hot sauce? To die for delish. I swear.
Let’s talk about how beautiful veggies are. Especially in the dead of winter when everything is slushy grey and ugly. The best kind of veggies are convenient veggies… Enter! Frozen veggies which become perfectly crisp steamed veggies after being steamed for a mere five minutes. Costco sells a five pound bag for around $7. Its incredible. I love Costco. And I love frozen veggies. That is all :) Busy life? No excuses. Eat like a champion! (featuring Asian stir fry!).
Okay, so this is dinner, not lunch, but the point of this pic my obsession with Othentic not-so-sauerkraut and beets. I’ve been mixing sauerkraut with the prepackaged organic Love beets from Costco. They’re SO delicious! I feel like I’m eating candy (and they’re packed with nitric oxide which helps me run like ze wind, hooray!). Yet another awesome, fast way to add some pizazz to your lunch! By the way… I’m still addicted to PaleOMG’s pulled pork chili which I topped with homemade guacamole.
Last, but certainly not least, is this yummy bacon wrapped chicken (recipe by Three Phase Paleo, aka e-book of delicious, nutrient dense, family friendly meals) served with carrots and…duhhhh, cabbage!!! This cabbage is cooked in the same pan as the chicken so it soaks up all the yummy flavor of the chicken & the bacon…and ermergerd its sooo goooddd! The cabbage gets all salty and dripping with lemony goodness, ah I totally want some right now!! Anyway, I’m an obvious cabbage junkie. And this is a new year, new obsesh, and I can’t believe I’ve started 2014 as a cabbage-addict. What’s wrong with me?
