Salmon Burgers: Quick & Easy #Recipe #healthyrecipe

On Valentine’s Day (geeze, that was actually a really long time ago at this point), the boytoy and I had salmon lox as an appetizer. It was divine. The next morning, I went out and bought salmon lox and ate the whole darned, salty piece of fish in less than 48 hours! Its just so delicious! And since its a protein packed, heart-healthy source of omega-3s, I’m totally okay with housing down large amounts of salmon. However, that (f)ish is pricey.
I love the color of pastured egg yolks!So when I saw 14.75 ounce cans of wild caught, Alaskan salmon for a mere $3 at Shoprite, I was allll over those babies like sushi on rice. Salmon, salmon, salmon. How I love thee. And since I’m starting to get into the high mileage days of half marathon training, you can be the anti-inflammatory powers of salmon loves me right back.

photo 2These salmon burgers are inexpensive, easy to make, and fast. One can makes 12 – 13 burger patties which are just as delicious cold for snackage as they are heated up paired with a starch or some veggies for a meal.

I’ve actually taken to eating them for breakfast lately with a sweet potato (drizzled with almond butter), some lemony kale and black coffee. Breaking breakfast conventions one salmon patty at a time. You know HOW I DO!

    “However, that (f)ish is pricey.” I see what ya did there. Lol. So silly. These look awesome, btw!! The hubby and I both LOOOVE salmon but never buy it because, like you said, it’s so expensive! These, though, will be happening soon!

      Heh :) They are SO GOOD! I’ve been eating leftovers for breakfast everyday! Such a great, affordable way to increase omega-3 intake…and salmon is WAY more delish than tuna! Thanks for reading!

    Made these over the weekend – such an easy recipe and delicious! Love this! It made 12 mini-burgers so I have several meals and I am loving it. This will be a new favorite for me.
